Boudreaux and Thibodeaux

Thibodeaux was fishing one day when he had a heart attack and died. The next day Thibodeaux's wife, Ada, placed the obituary in the Crowley, Louisiana newpaper that read, "Thibodeaux done died!" The newspaper called Ada and explained that she could add some details since the obituary could be 10 lines long. She corrected the ad and the next day it ran stating, "Thibodeaux done died! Boat for sale!"

2 lb ground meat (beef)
1 lb ground pork
1/2 bulb garlic chopped
2 large onions chopped
1/2 ball pepper chopped
1 bunch shallots chopped
2-1/2 cups uncooked rice washed
One 8 oz small can tomato sauce
Two 6 oz small cans tomato pasta
Darn Good Seasoning
Chopped hearts of cabbage
2 large loose leaf (Beef Heart) cabbage

Mix ground meat, ground pork, onions, garlic, bell pepper, shallots, washed rice and 1 can of sauce together. Add Darn Good to taste. Add chopped cabbage hearts. To prepared ingredients into rolls, loosen and steam cabbage leaves till tender. Roll approximately 4 oz meat mixture within cabbage leaves, seasoning each with Darn Good Seasoning. Lay on rack in large heavy pot. Mix 2 cans of paste with hot water, making enough sauce to cover cabbage rolls. Cover and cook on medium fire for about 2 to 2-1/2 hours or until cabbage is tender and rice is cooked.

Darn Good Baked Chicken

3 tsp Darn Good Seasoning
One 3-pound fryer
1 small apple
1 stalk celery
1 bell pepper
1/2 small onion
1 tablespoon vegetable oil
1/8 teaspoon Accent
1/4 cup Italian dressing,
1/4 cup Worcestershire sauce

Preheat oven to 350F. On the day you plan to cook it, clean fryer well and season it all over the outside and inside with Darn Good and Accent. Rub Worcestershire sauce and Italian dressing on fryer as well and refrigerate. When ready to bake, stuff fryer with whole onion, whole bell pepper, celery stalk and whole apple. Place in well greased pan lined with foil. Cover chicken with foil and bake 1 hour and 15 minutes until tender. Baste chicken as it cooks. Remove foil and continue baking until brown.

Crawfish Jambalaya

3 tsp Darn Good Seasoning
1 lb or 2-1/2 cups crawfish tails
1-1/4 cups rice, uncooked (long grain)
1 tsp flour
2 tbs salad oil
1 cup onion, chopped fine
1/2 cup parsley (2 tsp dehydrated)
1/2 cup green onion tops, chopped fine
1/2 cup bell pepper, chopped
1/2 cup celery, chopped
1/4 cup crawfish fat (optional)
1-1/2 cups water

Brown flour in oil to a golden brown. Add onions. Stir constantly until onions are almost cooked. Add one and a half cups cold water and simmer one half hour. Add crawfish tails and fat. Cook until crawfish tails turn pink. Add about two cups water and bring to a boil. When water is rapidly boiling, add remainder of ingredients. Stir to blend and cook on low heat covered for about 1/2 hour or until rice is tender. Five minutes before serving, use a two-prong fork to fluff up jambalaya so that rice will have a tendency to fall apart.

Creole Red Beans and Rice

1 lb. dried red beans
2 large onions, chopped
2 stalks celery, chopped
1 green pepper, chopped
1 clove garlic, minced
1/4 tsp. thyme
1/4 tsp. basil
3 tsp Darn Good Seasoning
1/4 cup chopped fresh parsley (optional)
2 lbs. smoked sausage
Hot cooked rice

Sort and wash beans. Combine red beans, onion, celery, green pepper, Darn Good, thyme, and basil in a Dutch oven; cover with water and bring to a boil. Reduce flame; cover and simmer 2 to 3-1/2 hours or until beans are tender and a thick gravy is formed. Add more water, if necessary. Stir in salt, pepper and parsley. Cook sausage according to package directions; cut into serving pieces. Serve beans and sausage over rice.

Country Chicken and Rice

1 tsp thyme
1 tsp garlic salt
1 tsp Darn Good Seasoning
4 chicken thighs, skin removed (about 1/4 pound each)
2 tbs vegetable oil
1-1/3 cups water
1 tbs butter or margarine
1 pkg (5.2 oz) Uncle Ben's Country Inn Brand Vegetable Rice Medley
1 cup broccoli flowerets

Combine thyme, garlic, Darn Good. Sprinkle evenly over both sides of chicken. Cook chicken in oil in 10-inch skillet over medium low heat until well browned on both sides, about 10 minutes; turn occasionally. Remove chicken from skillet; drain excess fat. Combine water, butter and contents of all three packets in skillet. Bring to a boil. Return chicken to skillet. Cover tightly and simmer 15 minutes. Add broccoli. Continue cooking covered until all water is absorbed, about 5 minutes.

Cajun Cabbage Jambalaya

2 lb lean ground chuck
2 cups chopped onions
1 cup chopped celery
1 cup chopped bell pepper
2 cloves chopped garlic
2 quarts shredded cabbage
Two 10 oz cans diced tomatoes and green chili peppers
3 beef bouillon cubes
2 tbs vegetable oil
1/2 cup water

Put oil in a heavy 5 quart pot. Add ground meat, season with Darn Good Seasoning and stir until brown. Add bouillon cubes, onions, celery, garlic and bell pepper. Stir and cook for about 15 minutes. Add tomatoes, undrained and water. Cook for a few minutes then stir in cabbage. Lower fire to medium and cook stirring often. Put lid on pot and cook until cabbage is crisp tender. If mixture is too dry add a little hot water and adjust seasonings. Add cooked rice until mixture is moist.
